As a starter or as an aperitif, treat yourself to this delicious recipe of vegetable tarts and sardines with 5 berries.
Preparation time : 30 minutes
Ingredients for 4 persons :
- 4 old-style sardines with 5 constable berries
- 200 g flour
- 50 g of water
- 100 g of soft salted butter
- 60 g of bush
- 15 cl of liquid cream
- 1 egg
- ½ zucchini
- 1 carrot
- 2 parsnips
- Salt and pepper
1 - Make the shortcrust pastry: mix the flour, soft butter and water. Form a ball and place it in the fridge.
2 – Preheat the oven to 180 ° C (Th.6)
3 - Peel the vegetables (except the courgettes), cut the ends and cut them into thin strips with a mandolin. Blanch the vegetables in turn in boiling salted water for 2 min, then drain.
4 - Take the dough out of the refrigerator and divide it into 4. On a lightly floured work surface, roll out each ball and fill the molds. Prick the bottom of the tartlets, add a few dried beans and bake for 10 min.
5 - Meanwhile, cut the vegetables into rectangles of about 8 x 1.5 cm.
6 - In a salad bowl, combine the bush, cream and egg. Beat like an omelet and add a little salt and pepper.
7 - Take the tarts out of the oven and remove the dried beans.
8 - With the vegetables, form small rolls and place them on the tarts, alternating colors. Add the creamy preparation on top. Do not fill all the way to the top of the vegetables.
9 - Cut the sardines with 5 Connétable berries, remove the bones and crumble them coarsely. Fill the vegetable flowers with sardine crumbs and bake for about 35 minutes, depending on your oven.
10 – Enjoy with a nice salad.
